Wynwood-Based Butcher Shop Beer Garden & Grill Set To Open In West Palm Beach This April
Old-school butchery, hot German pretzels, and 3-liter beer towers have found a home in Palm Beach County.
Father and son team Igor and Fred Niznik are opening The Butcher Shop Beer Garden & Grill in West Palm Beach’s downtown district this April. This is the pair’s second location following the popularity of the original Wynwood restaurant that opened in 2013.
“Over the past four years, the Butcher Shop has made its mark on the food scene in the Wynwood neighborhood,” owner Fred Niznik said. “We want to do the same thing here in West Palm Beach and be a part of the community’s growth while bringing them the finest quality of meats available.”
Like their first venture, this restaurant will be home to a three-part concept featuring a retail butcher shop, a full-service dining area and a German-style beer garden.
The meat market will stock fresh, all-natural, antibiotic and hormone-free cuts of steak, poultry, sausages and hamburgers, with the retail space embodying an old-school New York butcher shop and authentic butchery techniques.
Despite the new neighborhood, the one thing that won’t change is the Eastern European flavor Igor grew up with in Russia. The restaurant concept will fuse the family’s Eastern European heritage with German classics.
Menu mainstays will include hot German pretzels served with a cheddar béchamel sauce ($8), pan-seared pierogis filled with potato and cheese ($7), and German apple strudel with ice cream and a caramel glaze.
The Butcher Shop will also serve a mix of local Palm Beach County brews, including Twisted Trunk and Saltwater Brewery. These and any beers on tap will be offered in 3-liter sizes. The full bar will also offer a traditional happy hour.
“While we want to stay true to our original menu that has proved successful at our Wynwood location, we do plan on adapting some items on the menu to cater to the different tastes of our new neighborhood,” Fred Niznik said. “We want people to be able to come in off the island and enjoy a sophisticated meal in relaxed attire without spending a fortune.”
The idea for this unique hybrid stems from the family’s roots. Igor Niznik owned Charlie’s Gourmet Meat Market in Palm Beach Gardens, and his son Fred frequented many German-style beer gardens while working in restaurants in New York.
Upon relocating to Miami, Fred sensed a vibrancy amid Wynwood’s developing art scene and burgeoning culture that reminded him of New York. He was inspired to open his own beer garden in Miami.
The family duo then decided to blend their passions and create an immersive experience where guests can enjoy Eastern European-inspired dishes with local brews or take home fresh cuts of meat to cook on their own.
As they turned their eyes to Palm Beach County, the Nizniks found a new home for their restaurant in a historic building of downtown West Palm that dates back to the early 1900s.
“When we saw the building, we knew our search was done,” Fred Niznik said. “Not only is the space gorgeous, but it has maintained that rustic charm from being built early last century. We are excited about being in an up-and-coming extension of downtown, off 6th and Olive, and look forward to contributing to the revitalization of the area.”
